My Mom's Crunchies

This weekend in particular had me missing home, and with my mom being a great baker, I headed to the kitchen to whip up something she always makes for Francesca and I.


And so, crunchies were churned out. Bites of delicious roasted, syrupy oats that can be enjoyed on their own, or with a cuppa tea.


Ingredients:

  • 2 cups oats

  • 1 cup sugar

  • 1.5 tbsp syrup

  • 1 tsp bicarbonate of soda

  • 1 cup flour

  • 1 cup desiccated coconut

  • 125g baking margerine

Method:

Preheat your oven to 180° celsius.

Melt your butter and syrup together on the stove on a medium heat.

Once melted, stir in your bicarb. It should froth when added, so continue to stir until your buttery mixture starts to turn golden.

In a separate bowl, add your dry ingredients, and once your syrup mixture is ready, pour over your dry ingredients.

Stir well, making sure all your dry ingredients is mixed in well.

Add mixture to an ovenproof dish and press down firmly.

Bake for 11 minutes.

Remove from the oven and cut whilst hot.


Once cooled, serve and enjoy!
